Chicken, Mango and Veggie Wraps

Crunchy, fresh and a bit sweet, these healthy wraps are great for tossing in the cooler for a day at the beach. They're also kid-friendly and a snap to put together. This recipe makes two wraps.

COOK TIME: 0 minutes

2 burrito-sized whole wheat tortillas
4-6 lettuce leaves, washed, dried and ribs removed
1 pre-cooked chicken breast, sliced
1 avocado, peeled, pitted and sliced
1 small mango, pitted, peeled and sliced
1/2 small red, white or sweet onion, thinly sliced
Handful of corn kernels (optional)

Warm tortillas for about 10 seconds in the microwave or on a burner, just until flexible.

Place tortillas on a work surface. Arrange lettuce, chicken, avocado, onion, mango and corn on tortillas. Fold the bottom edge of the tortilla over the filling and roll tightly. Serve or wrap in foil and refrigerate until ready to serve.
