Panini with Brie, Cranberry Sauce and Caramelized Onions

This festive grilled sandwich is sweet, salty, creamy and absolutely delicious. It makes a great easy lunch or after school snack for the kiddos! This recipe makes 2 sandwiches.

PREP TIME: 5 minutes
COOK TIME: 40 minutes

Ingredients
For the caramelized onions:
1 large sweet onion, sliced
2 tablespoons olive oil
1 tablespoon butter
Salt, to taste

Remaining sandwich ingredients:
4 good-quality slices French or sourdough bread
1 tablespoon butter, softened
6 ounces sliced Brie cheese
1/4 cup cranberry sauce (whole or jellied)

Directions
Make the caramelized onions: Heat a large, heavy skillet to medium. Add butter, oil and onions and toss to coat the onions with the butter and oil. Cook, stirring every few minutes, until the onions turn a light caramel color; about 25-30 minutes. Remove from heat and let the onions cool before assembling the sandwiches.

To assemble the sandwiches, place the brie, cranberry sauce and a scoop of onions on two of the bread slices, dividing equally. Place the remaining two slices of bread on top of the sandwiches. Butter the outsides of the bread slices and grill in a skillet or panini press for 5-7 minutes, or until the bread is toasted and the cheese is melted. Slice and serve immediately.
